I make soups, roasts, cakes and cookies for the freezer. I used to make egg noodles too but now I skip those. No cooked side dishes or chicken in the freezer.

Cheese snack, cakes, cookies, almond clusters, choco mousse dessert cups, veggie soup, chicken soup, egg lukshen, roast, potato kugel, and maybe ice crean.

The almond clusters is very simple, melt baking chocolate, mix with chopped almonds, spooned onto lined cookie sheet and put in freezer for a few min till it hardens. Remove and put into airtight container.

I didn't know you can freeze egg noodles. Do they need to be frozen some special way?

Cakes, cookies, strawberry - apple crisp, broccoli kugel, potato kugel, ices, chocolate mousse ice cream, breaded shnitzel (raw), meatballs, prepared chicken (raw )roasts,.....just about everything; ) I like to go into Yom tov with all my food prepared /cooked so I can really enjoy it!

I freeze: cakes, soups roasts, gulash, brisket, chicken thighs, schnitzel, salmon, kugels, macarons, latkes, knaydles, fried veggies, carrot/butternut-kugel, lemon sorbet (obviously, duh!)

I usedto roll them up, lay them out in one layer, and freeze. Then I'd pull them out and slice into curly noodles as needed. It wouldn't taste good frozen for a long time but 2 weeks if fine. It allowed me to make them once and then use as needed throughout YT.

I made 2 pans of meatballs last night - very saucy - freezes beautifully.
On Sunday I will make orange soup and turkey breast and freeze.
I also make matza balls in advance and freeze.

I freeze tons of egg noodles already cut, in quart size zip lock bags packed tightly, with no air. They freeze beautifully. I only make them once before you tov for a whole you tov.

Cheese snacks:
3 8 oz whipped cream cheese
1 cup sugar
3 eggs
2 T. Vanilla sugar

Blend cream cheese with sugar until light and fluffy (you can mix by hand too, but make sure to mix well)

Add eggs and vanilla sugar. Mix well. Fill cupcake holders (I use the thick ones that doesn't need a cupcake tin) bake for 20 min at 350. It'll settle when removed from oven.

Choco mousse trifle cups:

Mousse:
9 oz bittersweet chocolate
1/3 cup oil
1 T Coffee disolved in 3 T boiling water
2 T liquer or wine
5 eggs, seprated
3/4 cup sugar, divided

Place chocolate, oil, coffee, and liquer in a small pot over medium flame, cook till a smooth consistency, abt 5-10 min. Remove from heat and cool for 15 min.

In an electric mixer, beat the egg yolks with 1/2 cup sugar for approx 6 min. Reduce speed, and gradually add choco mixture, beating slowly.

In seperate bowl, beat egg whites with 1/4 cup sugar untill stiff, fold the egg whites into choco mixture until incorporated, refridgerate for 1 hr.

Crumb layer:
2 cups potato starch
3/4 cup ground walnuts or almonds
1 egg
3/4 cup oil
1/2 cup sugar
1/4 tsp salt

Preheat oven to 350
Mix ing togather. Spread mixture on lined cookie sheet, bake for 15 min.

Browny layer:
4 eggs
1 1/4 cups sugar
2/3 cup oil
2 tsp coffee dissolved in 2 tsp boiling water
1/2 cup cocoa
1 cup potato starch
1/2 cup chopped walnuts

Preheat oven to 350
Using an electric mixer, beat eggs and sugar for 7 min. Reduce speed and add dry ing. Add the coffee and mix until just incorporated.
Pour batter into 9x13 pan and bake for 25 min. Do not overbake. Remove from oven and allow to cool.

To assemble:
Crumble the brownies, in individual cups, (mini trifle cups etc) layer the crumbled brownies, mousse, and crumble. U can garnish by adding a bit mousse on top and adding peeled, chopped, or slivered almonds etc.

Refuah shleima to your cleaning person.

Different philosophies.

Some people don't use anything prepared, other than matzo (presumably), so they spend hours making potato starch to make into cakes, or whatever.

Some people don't cook on the chag at all.

Some people have huge crowds.

Some people like making complicated things.

Others ... are the exact opposite.

I buy prepared items, like ketchup and potato starch. I cook on the chag. And I don't have a huge crowd, except one night. I feel pretty darned decadent that I took off Monday to cook!

I try to cook between 4 days to a week before. Well, I'd love to but usually don't have that much time.
This year, I will be glad if I get done in time...
