I was just thinking about this as the last days are supposed to be hot where I live. In addition to the usual cut up fruit, etc., I was thinking about melon soup. Ridiculously easy. You puree melon
I like to add a bit of fresh mint and lime juice to honeydew soup and a bit of orange juice (and fresh zest, if you use it on pesach) to canteloupe. If your mother-in-law or someone else who you want to impress is coming, you make both honeydew and canteloupe and swirl them (basically you put some of one in the bowl, plop some of the other in the middle and swirl with a sharp knife). If you like things sweeter you can add a little honey orsugar but taste as you go.

Salmon skewers over zucchini spaghetti salad
Deli salad
Breaded eggplant topped with piped potatoes
Stuffed mushrooms

Take a crepe, fill with meat/chicken or sautéed veggies, or julienned veggies, wrap closed like a blintz, serve on a small plate with dipping sauce in a small bowl or drizzled over it.

Lahmadgeen
Get the matza wet leaving it a minute in water, dry a little and put lahmadgeen meat on top and bake until done
