Walnut oil can turn rancid quickly.

No way to know when it will go. Just use it when you can.

I would imagine that UNopened walnut oil will be fine till the expiration date. Only an open bottle will turn rancid.

A quick question to Google showed me that an unopened bottle of walnut oil can last a year. But why not use it now?

I used this Pesach an unopened walnut oil from last year and it was fine. Thought I would be short and bought another I didn't open and I am saving it for next year.

Can I save a closed matza meal? Cabinet or freezer?

I've saved oil for a year, but only by storing the bottle in our spare fridge.
