topping a cheesecake? I'm thinking I'd mix it with sugar and smear it on top of the cheesecake and then decorate with chocolate shavings. Can I? I have a lot of ricotta.

If not, what's your best cheesecake topping?

I wouldn't. Does the cake need a topping? Sour cream works.

I would use the ricotta for something else or freeze it for future use.

It's wetter/creamier than farmer cheese but works well for these things.

For blintz filling just mix together with a fork

1 lb. ricotta cheese
2 egg yolks
2 Tbsp flour
2 Tbsp sugar (or more to taste, like tablespoons)
1 tsp vanilla extract or 1 Tbsp vanilla sugar

For cheese pancakes, mix together with a fork

1/2 cup ricotta cheese
1/2 cup flour
1/4 cup sugar
2 eggs

Cheese pancakes are great! You can also do a ricotta cheesecake (I know someone else mentioned this also).
Sour cream on cheesecake??? never heard of that before.

yes! It bothers me so much, for some reason, that so many frum women I know think you're supposed to use cottage cheese to make lasagna and baked ziti!!!! And then when I tell them that you're supposed to use ricotta, they look at me like they don't even know what that is!!!

Ehm, I really appreciate your love for Ricotta, but in lasagne and other recipes we (I'm italian) don't use it!!!!
You can eat ricotta with chopped tomatoes, oil and salt, it's good and light, or you can use ricotta in vegetable quiches, I have one that's a big hit in my family.
But in lasagne and baked pasta we use béchamel.

I once tried a lasagna recipe with bechamel, it did not work at all. The noodles soaked it all up, the whole thing was dry, not for me. I will stick to ricotta , even though it's not authentic. 😶

Baked pasta:
Cook your pasta, not too much time (al dente). Prepare besciamella with more milk, it has to be slightly liquid. put some pasta in a saucepan, then tomato, then besciamella, and repeat. Add some parmigiano to the top and bake 30-40 minutes.


lasagne: quite the same but you use lasagne pasta. And it is supposed to be with meat but I often prepare it without.

Please forgive me if I'm too passionate, You know this italians go crazy with food!!!

It can still be lasagna, since lasagna is defined as a baked dish made with wide noodles, layered with cheese, meat, vegetables and sauce.
and bh other nationalities are passionate about food too and know how to cook, including pasta dishes...
