I was looking for a recipe to make my pepper steak with ingredients I have at home and I found this one:
Ingredients
4-6 steaks (I used flank steak, but you can use whatever is on sale)
2 chopped bell peppers
1 yellow onion, chopped
1 cup tomato sauce
½ cup Worcestershire Sauce
¼ cup water
1 Tbsp Italian Seasoning
¼ tsp black pepper
Directions
Use a 4-quart slow cooker. Put meat in first.
Cover with the chopped vegetables.
Pour in tomato sauce, Worcestershire, and water.
Add Italian Seasoning and black pepper.
Cover and cook on low for 6-7 hours on low, or on high for 4-6 hours.
my question is: I have like 1 pound of pepper steak are the ingredient amounts good or do I need to adjust?

Yes you can use same vegetable and sauce amounts. But pepper steak will likely need 8-9 hours of cooking time on low.

Even if they're small and skinny?
How long do you think it'll take on high? Or do you think it'll dry out the meat on high?

8 hours then. And 4 hours on high.
