What's your favorite orzo and vegetable combinations?
I've done sauteed onions, peas and carrots, also onion with colored diced peppers.
What would you pair with onion and mushrooms?
Any other vegetable ideas?

OrZo with sauteeed onions and mushrooms (can add capers)
Sundried tomatoes and artichoke hearts
Corn and black beans
Cherry tomatoes, basil, red onion and red wine vinegrette

Yellow and green squash and colored peppers with soy sauce, salt, and pepper.

I make a rice pilaf with orzo.
3 tablespoons olive oil
1 cup of orzo
1 cup of white riced (plain or basmati)
Fry on high heat, stirring constantly until the orzo starts to turn golden. Really watch it and stir NON STOP! If you burn it you will have to start over.
Add one cup each chopped onions and mushrooms, and a teaspoon of chicken soup mix.
When onions are translucsent, CAREFULLY add 4 cups of water. Keep your hands well clear, as the steam will be intense.
Stir and bring the water to a boil. Cover and turn off the heat, letting the residual heat do the rest of the job.
DH absolutely raves about this. It makes good stuffing for chicken and turkey, if you add a cup of chopped celery when you add the onions.
Refrigerates well, and you can reheat it on Shabbos with no trouble. Leftovers are really yummy added to vegetable soup at the last minute (don't do it sooner or it will get mushy.)
