1 8oz box manicotti, cooked
1-1.5 cups marinara sauce
4 oz shredded mozzarella

Carmelized onions:
2 tbsp oil
3 large onions, diced
1 tsp kosher salt
1/4 tsp black pepper
2 tsp brown sugar

Filling:
1 16 oz container cottage cheese full fat
4 oz shredded mozzarella
1 egg
1 tsp kosher salt
1 tsp dried parsley
Pinch cayenne pepper

Onions: heat oil over med low heat large frying pan. Add onions, salt, pepper, sugar, stir. Sauté at least 2 min. Best flavor- heat on low and cook for up to hour. Cool.
Filling: combine cheeses, egg, spices, carmelized onions. mix.
Preheat oven 350, grease 9x13, set aside.
Stuff cheese mixture into cooked manicotti, place in pan.
Spread marinara sauce on top, sprinkle mozzarella cheese over it, bake 40 min till cheese bubbling and golden.
(Can prep filling day or two ahead, then bake. Or freeze fully baked and rewarm uncovered.)

That's so odd. I was poking around yesterday and saw that recipe. Maybe they took it down? Sorry. Glad someone posted it for you! Hope it's yummy!
