Looking for tried and true rice dish for a 40 person seudah

I like the teriyaki rice on kosher.com (though I haven't made it for 40!)
They have one with meat that looked interesting if you want something more filling. I haven't tried it, but it's called garlic lovers dream rice or something like that...

cook rice.
fry loads and loads of onions until well done (but not black) with salt, pepper and spices (e.g. cinnamon/turmeric/cumin/corinander/paprika/cardamom). mix it all together, done!

forgot to mention that you can add roasted nuts and raisins/cranberries to the mixture as well

CEF yum, I'm going to do this.
You can also do vermicelli rice.
Sauté lots and lots of diced onions, the more the better
Sauté vermicelli noodles-very thin noodles
Sauté rice
Add crushed garlic
Water
Salt and pepper to taste
Bring to a boil
Lower flame and cook for 18-20 min.
Finely chop parsley (I use dry, but fresh is better) and sprinkle on top before serving.
I've made 3 cups of rice at a time, which serves about 12-15 ppl, more if you have other sides.
I would make it in 2-3 seperate batches
Yellow rice and chicken is also nice and you can make it in the oven.
It's really easy because you just dump everything in disposable pans and cook in the oven. It does take a long time to bake, though.
