(anon because I told a relative about this and she is definitely on here)
I made this recipe and it is delicious, even though usually I don't like quinoa or leafy greens. It burned the bottom of my pot though.

1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
2 cups uncooked quinoa, rinsed
1 cup canned lentils, rinsed (I couldn't find canned lentils so I cooked half a cup in 1.5 cups of water for 20 minutes)
8 ounces fresh mushrooms, chopped (I used canned and just put them in 5-10 minutes after starting the cooking)
1 quart vegetable broth
1 bunch Swiss chard, stems removed
Directions
Heat the oil in a large pot over medium heat. Stir in the onion and garlic, and saute 5 minutes, until onion is tender. Mix in quinoa, lentils, and mushrooms. Pour in the broth. Cover, and cook 20 minutes.
Remove the pot from heat. Shred chard, and gently mix into the pot. Cover, and allow to sit 5 minutes, or until chard is wilted.
We haven't finished it yet, but my guess is that it serves 6
