Of course you tell her about it! The Torah explicitly states that hares (arneves) are not kosher.
Now, then, if it was a hair, I'd let it go. There's no need to embarrass her. No one's perfect. If it happened consistently, OTOH, then say something.

I wouldn't have eaten the soap, never mind the hare!

Soap is not kosher, generally, either.

I wouldn't get too stressed. The soup boils so at least the hair was sterilized.
I doubt her maid is deliberately dropping hair in the soup.
Hey Ribbie, you're back!

Maybe it wasn't a red hare? Maybe a red herring? And then you would have a real halachic problem because herrings don't go too well with chicken, according to halachah.

I remember another thread where some amother was carrying on about a "red hare", which meant red hair. I'm not sure why, but something smells off.

Thank you amother! Laughing with you, not at you. You made my evening. Bet you didn't think anything good would come out of your eating harey soap.

I would silently gag then knock the bowl over by mistake on purpose. I am seriously gagging now by the thought because a similar incident happened to me on succos that I was hoping I would never have to think about again.
