Chocolate Cheese Muffins (from the BY Cookbook)
Chocolate cake:
1 1/2 cups all purpose flour
1 cup sugar
1/4 cup Dutch processed cocoa
1 tsp baking soda
1/4 tsp salt
1 cup milk
1/3 cup vegetable oil
1 tsp vanilla extract
Cheese filling:
1 8oz block cream cheese
1 large egg
1/2 cup sugar
Preheat oven to 350*. Grease one 12-cup muffin tin or line each cup with paper muffin liners. Set aside.
Mix all purpose flour, sugar, cocoa, baking soda and salt in a large bowl. Add milk, oil, and vanilla extract. Mix until just combined.
Place cream cheese, egg and 1/2 cup sugar in the bowl of an electric mixer. Mix until smooth. (*Note- I mix by hand and it comes out fine).
Fill muffin cups 2/3 full with chocolate cake batter. Place a dollop of cream cheese filling in the center of each cupcake. Bake 25-30 minutes. Let cool.
**Note- if you have extra cheese filling, one easy way to use it up is to line muffin cups with a chocolate chip cookie and then fill with the cheese filling. You might get 2-3 extra mini cheesecakes from this recipe. Enjoy!

It's just quality cocoa... I'm sure you can use any brand.
