We are in the middle of trying to find out what food are not good for my kid.

As for now we know she should try to stop all wheat.
Rye-bread and rice are ok.
I am waiting to hear if she can have spelt, corn or oats.

However I want to start already cut out the wheat.
So I am in need of challah, Mezonos rolls, cookies and cupcakes recipe. (Using rice, rye or gluten-free)

Any good recipe would be welcome.

Regular bought rye bread is mostly white wheat with some rye flour mixed in. But one can make (and I'm assuming buy in specialty stores) 100% rye bread.

I am not sure yet about spelt. But I want to start stoping to use wheat. And as for now til I get more results it's 100% no wheat and the spelt is still 50/50 chance.
So I thought to do spelt challah or 100% rye.

Apparently she should be off spelt and corn too. So no corn flour, or spelt.

Please help me what other ingredients could she have for carbs/starch.
All the gluten-free product have got spelt or corn flour.

At the moment all she is allowed is rice and hopefully potatoes. But I can't just give her rice or potatoes.

I don't have any specific recipes on hand, but just in general, I use oat bran in recipes whenever it calls for matzo meal or bread/corn flake crumbs. So that should allow you to keep using some recipes you already know - I hope!

The soveya cookbook might be useful to you. The focus is more flour/sugar free recipes, but a lot of the recipes end up being gluten free.

WAITING for RESULTS: oats, potato flour, soy starch, tapioca starch.

What other flour or carb is there.

Ask about almond and coconut flour. Many people who can't tolerate grains can tolerate those well. They can't be subbed one for one in regular recipes but you can find recipes online for bread, pancakes, muffins etc....

If you give definitive options to work with besides rice and rye (which need other flours to be added to make a viable product) there may be more to work with. Are eggs ok? Eggs make a big difference in recipe options.
Are these options ok?
Cassava flour
Sorghum flour
Tapioca flour
Arrowroot flour
Almond flour
Coconut flour

Updates. Only spelt and wheat is not good.
