Following. DH insists on meat or chicken at every meal, and he's having panic attacks right now, because he hates all vegetables. He's already obsessing about what I'm going to serve for Shabbos!
I was a vegetarian for years, and when he leaves town for work I almost never eat meat. I know what to cook for myself, but cooking for him is going to be a nightmare.

These are my best options that people eat and cheap:
Baked potatoes, tinned salmon or tuna, veg shnitsels and salad
Eggs and potatoes wedges (fries) and salad (kids absolute favorite)
Pasta dish (marinara and cheese in oven)
Pita and falafel (pareve hotdogs as option)
Salmon, stir fry veg and noodles
Tuna patties, mashed potatoes and frozen veg
I dont fuss over dishes as I find it gets super expensive with cheeses etc and my kids like pretty simple

It looks like we're doing different fish, salad and a pasta cheese dishes most nights so that everybody has an option from low carb to fussy eaters.
