How do you spell Mendel in Hebrew/Yiddish?

I've seen it spelled:
Mem-nun-daled-lamed (modern Hebrew)
Mem-ayin-nun-daled-lamed (on the Rebbe's tombstone)
Mem-ayin-nun-daled-yud-lamed (tombstones of MM of Vitebsk, Rimonov and Kotzk)

Does anyone know which is the authentic spelling?

Does it matter which spelling I choose?

I would spell it according to the person I am naming after.

Mendel is a Yiddish name so the authentic spelling definitely has the "ayin" in it.
As far as how to spell it, it seems that they would both be authentic spellings. Similarly, the girls name Mindel can be spelled מינדל or מינדיל.
I would spell based on how my community spells the name.

I remember reading once that it depends on one's mesora - something like in chabad there is no yud and in viznitz there is and that corresponds to something else? I should look it up.

Just spoke to my sis about this recently as my grandfather A"H was Menachem Mendel. Her son was recently Bar Mitzva. They checked the spelling on my grandfather's matzeiva and also asked their Rav, and they are spelling it without any extra ayin's.

I don't know the authentic spelling.
The spelling you choose may not matter that much.
The spelling does have ramifications on a legal document (shtar) such as a kesuba or a gett. For this reason it's best you speak to your Rav. I had a similar question when the person my child was named after spelled their name differently than the common accepted way of spelling it. Our Rav suggested we speak to a different Rav in our community that has expertise in this area.

My husbands middle name is Mendel. Reb Yaakov Kaminetsky saw his yamuka with his name and told my in laws that the correct spelling is mem ayin nun daled lamed (his yamuka had been missing the ayin)

It is true.
It is not a Loshon Hakodesh word therefore the correct spelling is מענדל.
