We brought Videos to Poconos back in the day when there were no DVDs. But we bought a blow up pool, rode bikes and watched videos. We went to that small zoo. We also went to an old fashioned place I forgot what it was called but I have good memories from those days in Poconos.

Biking and hiking on nature trails, wading in pond. Fishing? Rent a motorboat on a lake. Rafting. Bushkill falls? Claws and paws zoo. Quiet Valley farm museum.
No restaurants as far as I know- maybe in Scranton?
You can bring a grill and meat and do a BBQ. Also depends what you are staying in...

Playgrounds, basketball /baseball /tennis if your kids are into sports.
Picnics- there are lots of parks with picnic areas, many times near lakes or rivers or hiking trails.
Lots of nature
What kind of things are you looking for?

I know about the nature stuff, the falls and the trails.

Im wondering if there are any amusement parks or unusual sites and historical places for kids and estates/mansions and outlet shopping for adults.

Although if there would be, theyd be in the AAA book.

Dingmans fall is free.
I took a 3 year old rafting. Used the place near Fernwood. Take lunch and make it a day trip. We made a pit stop to eat and swim.

I don't know exactly how far this is from you but the Crossings premium outlets is a huge outlet mall in the Poconos
There's also water parks but might not work for your comfort level with tznius
Also check up if there is a county fair in the area, those are usually a lot of fun.
Queens Valley farm museum is an old farm and schoolhouse/homes/ etc and people dressed up in old fashioned dress. Sometimes they have all sorts of programming

Thats Steamtown National Historic Site
If youre coming to Scranton, theres also the trolley museum which kids enjoy.

No restaurants here, just Ritas, Krispy Kreme, and a kosher bakery.
