I put it on high temp., and it gets nice and puffy. but I realized when I leave it in for long (even lowered temp.), it sinks in (edges are higher than center). Any tips or advice?

I add in in a tsp of baking powder eventhough my recipe doesn't call for it. I think it makes a difference.
I also heat up oil in the pan before adding the batter. I then mix it in. The hot oil definitely makes it fluffier.

If you want overnight style kugel (long baking), it's not going to be fluffy.

If you talking about Potato Kugel, I add a cup of Seltzer. Makes it light and fluffy. Yum

yes potato kugel. I tried seltzer and baking powder....I think.I can't bake it for too long on high, only until golden..

The more liquid the better. Dont drain the potatoes after they have been grated. Add more eggs and a fair amount of oil

the kugel puffs up nice after an hr. but after long time it sinks in a little. I'm thinking more liquids will make it more dense. I want it to cut nice thick slices.

Bake on high until golden, cover and lower heat.
How high do u bake at?

Seltzer has to be fresh opened bottle makes a major difference
