To me " diet kugel" is an oxymoron. I would just make roasted or steamed veggies

If you specifically want kugel, saute onion, garlic, and your choice of vegetables in Pam. Mix with egg whites and salt and pepper to taste. Bake until browned. Eat fresh. Too soggy when frozen.

Just chop up veggies like broccoli, peppers, onions, zucchini, mushrooms and add eggs, salt and pepper. Without flour or mayo is might be more of a cross between a Kugel and and omelette, but I like it. I make them muffin size and freeze. Take out as needed.
I would love to hear real recipes though.

Most veggies roast well at 425, with a little oil, salt and pepper, and I like to add some garlic towards the end and a little lemon juice. Butternut squash is good with red onion added towards the end, sage or herbs de Provence and a little honey or brown sugar to help get it to carmelize.
Brocolli- salt, pepper, garlic and lemon juice or zest
Cauliflower- sumac, garlic, lemon and a drop of sugar to help carmelize
Green beans- I add sliced red onion and colored peppers, I roast the peppers first for 10 minutes, then add green beans and onions, add a little Honey and soy sauce towards the end
Sphagetti squash is good with carmelized onions or garlic oil or pesto.
