Bought it Erev Yom Tov (Wednesday) and the 'behind the counter man' prepared it then. (It wasn't sitting on shelves waiting to be bought in the store, if that makes a difference.)
I've had it in my fridge, still vacuum packed. I'm a little finicky about deli meats. Is it bad? or could I eat it (tomorrow, Tuesday.)

Vaccum packed deli is usually fresh for 90 days.

Blessing, 90 days is a bit much. I've had vacuum packed deli that went bad after 2 weeks. It depends on the item, when it was fresh, when it was packed, how it was packed, how it was stored/traveled. Always check dates and sniff and taste.

Pastrami is a pickled meat, and it was vacuum sealed. Its almost certainly fine, but as others said, sniff and taste.

The dates on the store bought deli is usually 90 days after it was processed. If it's vacuum packed right it should last.
A family member works in the processing plant & that's what they say.

I doubt OPs meat was cured, smoked, processed and delivered to the butcher the day that he cut and packaged it for her.
