What kind of filling are you looking for? You could use any flieshig knish filling. A few ideas:
Sautted onion/garlic mushrooms with ground meat
Shredded chicken with veggies
Shredded meat with veggies (leftover meat or chicken are perfect)
Egg roll type filling
