Looking for some inspiration for an easy to cook and easy to eat menu for erev yom kippur.

All ideas appreciated, thank you!

Between the two meals (and we are having guests, hence the large amount of food):

Challah/matzah
Chicken soup w/kreplach
Chicken cutlets
Roasted chicken
Sweet lukshen kugel
Broccoli
Cole slaw
Rice
Maybe potatoes
Honey cookies
Applesauce
Melon

Whole roast chicken with potatoes
While wheat challah
Grapes
Maybe brocolli or cucumber salad

Perhaps Olive oil and spices/herbs
(Rosemary, salt and pepper and lemon juice. Or paprika, oregano salt and pepper)

there is a minhag? to have two suedahs erev yom kippur, I think as in to take the place of the seudahs that we aren't eating on the actual chag.

Watermelon and grapes
Coconut water and gatorade (and water)
Chicken soup with matzah balls and veggies
Thinking corned beef made in slow cooker
Challah rolls to make sandwiches
Kasha
Maybe mashed potatoes or potato salad

Open the package, place in the slow cooker, add water, turn the slow cooker on and before long the corned beef will be thinking "get me out of here!!!!!!"

Just keep in mind that some people don't eat meat for that meal... but the corned beef does sound delicious! I would love the recipe.

1st meal:
Salmon
Chicken soup (w/ lots of veggies) and kreplach

2nd meal:
More soup and kreplach
Chicken from the soup (this is the only time of year that I enjoy the soup chicken)
Rice or cous cous
Some easy veggie

The people I know with this issue take a (bread based-so they can wash) lunch to work then have a seuda when they come home or they eat a light first seuda when they come home then daven mincha and eat a second seuda.

These people will probably not work on erev jom kippur. My company is closing erev jom kippur. As we hold that erev jom kippur is a jom tov just as jom kippur is.

First Meal:
challa
salads
tilapia
chicken soup with kreplach
meat and potatoes
veg rattouille

Second Meal:
melon
vegetable soup
chicken and kasha
roasted vegetables
fruit compote
