In a recipe, does this mean the amount of chicken used for two schnitzels or all the white of one chicken?

If it uses the word cutlet, it means boneless skinless

A chicken breast in a recipe refers to 1 full side breast. Each breast is usually around half s pound. So 2 chicken cutlets would mean all the white meat of 1 chicken.
