So many things!
I learned how to put my kids' car seats in correctly. The manual was so confusing. Seeing it on video cleared everything up.
I learned how to roast a duck.
I learned how to repair a zipper myself.
I learned how to grow sprouts in jars in my kitchen.
I learned make-up techniques.
I learned how to do lymphatic drainage massage.
I learned a bit about how to do reflexology on my kids.
I watched a few painting lessons on YouTube before attempting to paint some canvases to hang in my daughters' rooms -- and they actually came out great. (And no, I am not naturally talented).
YouTube is also my go-to place when kids ask me questions I really can't answer. Like, how do planes fly? Why do volcanoes erupt? How did the mechanic replace your broken car window?
I really love YouTube.

Off the top of my head:

how to crochet properly (I was doing it wrong) and many different crochet stitches/techniques
how to knit
how to make perfect french macarons
how to make beautiful buttercream cupcakes
and of course how to waste hours and hours learning how to do things I'll never end up doing anyhow... (for example I have no time to crochet a full dress!)

How to do a French braid in my daughter’s hair. I felt like the only woman on earth who couldn’t French braid. DH was so impressed when he saw it and couldn’t believe I learned it from YouTube.

Put together random things
Make a fantastic beef jerky, bunch of recipes
Things related to medical conditions
Many many how tos just can't think of offhand.... oh a big one! What a light indicator meant on my car and how to fix it! Saved lots of money with that one!
If I ever have a how to or want to learn more about a took I google it and many times there is a YouTube video explaining the topic

How to sew elastic into as skirt.
How to do special hair braids.
All kinds of arts and crafts for kids, for when the kids are off school.
Tons of computer stuff like software installations, etc.

These are a few things that I can remember.

DD has been learning how to play guitar using youtube.

My BIL figured out which part on their washing machine was broken - ordered the new part online - and fixed it himself.
