What temp is good to leave oven on to keep fully cooked food warm without over cooking?

When I leave it on for a 2 or 3 day yuntif, it is on 180. I just need to get it in early enough that it warms up.

If its just for Friday night, I leave all the food in the oven at around 350 and turn it off right before shabos starts. As long as the food is covered stays nice and warm. If its for shabos day, I leave it usually at 200.

200. But I first pack all the food in and get it hot, then drop it to 200 (on a timer) right before lighting.

If it’s fully cooked I heat up the oven, with no food, all the way 500.
Right before Shabbat I put the food in covered and lower the oven to 185.
I leave it to automatically turn off right before the meal about 2 hrs. after candle lighting.
My fish is NOT in the oven, so we may be cleaning up from the fish course and the oven turns off at that time. This gives me time to put away the salads, rinse all the dishes, and put them in the DW.
My food is coming out straight from the fridge.
My oven cools down VERY quickly.

First I heat the oven with the food inside to 350, then lower to 195-200 to keep warm.
