They actually shrink quite a bit, so though I filled them 1/3 to halfway, I could have filled them to the top. Since there was a decent amount of oil in the pan, they came out crispy on the outside and mushy inside.
(I will likely do the same or similar this year since I also just had a baby five days ago.)

Why can't you make them on your milchig stove top? You are allowed to use the same burners for milchigs and fleishigs if they are clean.

Maybe you could try to make them in a waffle maker or sandwich maker?

Why don't you just try the crock pot and see how it works out? Some crockpots are hotter than others. I had food burn in mine.
If it fails just let the batter become a Kugel.

if you are gonna use a crock pot for latkes, just forget the latkes this yr.

you can bake for a healthier version, use a grill and be creative but you cannot use a crock pot. Either forget about it or buy them ready made.

I know I don't have to make them and I won't if I can't. That's why I was asking.

You can totally fry in the oven if you use enough oil. Like oven fried potatoes. They taste fried. Well, pretty close anyhow.

I made latkes in the oven today.

Yoma, can you kasher your milchig oven to make pareve latkes?
