I basically stopped for fire safety concerns. Am I overthinking?

I use it for Friday night only so put it on a time clock that goes off after the meal before we go to sleep.

I've been using a timer but am still nervous about it.

I do the same. I have the timer go back on Shabbat morning only if I plan to be home.

Nope. I got one several years ago, used it twice. It was so hot I was never comfortable with it. Then that horrible tragedy a few years back. Never again.
My MIL says her neighbors have it on a timer to just come on for 2-3 hours shabbos day. I thought this was problematic, that it had to be on from before shabbos. Has anyone learned otherwise? If it were okay, I might go for that.

Dunno, because we had it on for two hours into shabbos, then it went off for the night, and then it went back on in the morning.
I'm just so worried...

If it's causing you so much worry, don't second guess yourself. Don't use it. It's not worth it.

We use one with a timer set to go off after meals. It also doesn't get that hot. I'm very careful to clear the counter around it so nothing is in range. If yours is hot enough that it worries you, I wouldn't use it.

I leave it on my stove when I use it.

I just put the Kugel on top of the crock pot to warm up. The crock pot is the only warming item left on over shabbos. No hot plate or urn at all. In addition to worrying about fires, I worry about burns. A safe and warm shabbos to everyone!

Nope. I use my shabbos mode to keep food warm for friday night and shabbos lunch I make a hot dish in the crockpot and stack things on top to warm up. I am more concerned about my kids getting burned since my kitchen is small then I am about my apartment setting on fire.

Yes, we leave it on a timer. I’m not particularly worried about it. I have a glass coated one, not one of the Israeli ones that gets super hot

Keeping the oven on risks carbon monoxide. It's not the best option. Get a safe hot plate like IsraHeat and use a timer for Friday night. Cholent should go in the crockpot which is designed for long usage.

I have this one

And it's on a timer. It's only on when I am awake, 2 hours before each meal.
