I make mostly regular year round recipes on pesach. I'm sure you can do the same with kitniyos. If you post what you usually make I'm sure we can figure out how you can make similar for pesach.

Im looking for chicken mince meat cholent meat recipes. Also what can I get without a hecsher

Do you eat rice or just the other kitniot?

Here's some options:
Rice.
Rice and beans.
Rice with other stuff (many options).
Choresht (many options).
Dolmeh/Stuffed cabbage.
Gondi (meatballs with rice in it).
Cholent with rice.
String beans.

Plus ofc all the regular stuff (potatoes, mushrooms, eggs, vegetables, meat, chicken, fish...)

(Can you tell we eat rice?)

Potatoes
Eggs
Carrots
Celery
Chicken soup -it's still going to be cold

Chop meat can go a long way
I make a stuffed meatloaf that really stretches.
Basically you make a meatloaf recipe- Pesach friendly-
Flatten the meat on aluminum foil
Then on top of that I spread a spinach kugel mix, but any veggie kugel mix can work.
Roll it up jelly roll style
Bake, cool slice.

Mousakka
Shepherd pie

If you use the KP brown rice pasta boulagnaise is delicious

My mom makes these potato balls that are stuffed inside with ground meat.
They are coated in matza meal then fried.

Meatballs in tomato sauce served over rice.

Rice with a fried egg or 2 on top- this is one of my favorite dishes when I'm in a rush.

Savory matza Brie made with salt and lots of sautéed onions- yum

You can make a matza meat lasgna

Chicken and fried potatoes Syrian style- Maude

Once you can eat kitniyot, it's relatively easy to come up with economical meals, because you have an inexpensive protein at your disposal.

Lentil soup
Pea soup
Veggie burgers
Garbanzo bean salad
etc.

I guess that depends where you live. I live in Israel, so it's pretty simple.

You may need to buy dry kitniyot and soak them yourself instead of buying canned. Ask your LOR.

You probably won't find KLP cooked kitniot in the supermarket, and ask your own rabbi, but as far as I know someone who may eat kitniot on Pesach may buy them raw before Pesach without any supervision and sort through them (also before Pesach) to make sure that a piece of grain hasn't gotten into the package by mistake.

Use the same meat recipe

Onion
Peppers
Chopped tomatoes - can
Fresh garlic
Green olives -(optional)
or
Raisins -(optional

Chinese Eggplant -optional for presentation only.
Slice about 1 in thick.
On a parchment lined cookie sheet place the eggplant
Shpritz a little oil and sprinkle a little salt and grill until it's slightly golden
Alternative -you can fry the eggplant
Then take a Pyrex
On the bottom of the Pyrex put a little seasoned tomato sauce, then start layering eggplant, meat, eggplant meat, eggplant-
If you want to be fancy the last layer of eggplant you put the Chinese Eggplant rounds. Smear a little tomatoes sauce on top and bake for 1/2 an hour, or more on a lower oven.

Lasagna
Matza, meat, matza, meat, matza
In a Pyrex,
Take matzah big pieces and wet it a little bit, fit 2 layers on the bottom
Salt and pepper
Add 1/2 the ground beef that you mixed 2-3 eggs into
Then wet matza, season, meat,
The top layer add only 1 layer of wet matzah
Bake.
The top wil get a little crunchy watch it doesn't burn.
I use only hand Shmurah matza- so my lasagna doesn't look as pretty a when you use square. I don't have a round Pyrex for Pesach

Alternative is a dish called minna
My family version goes as follows
Matza, thick meat layer, sliced eggs, mashed potatoes with sautéed onions, finally 1 layer of matza.

Boulagnaise
Defrost meat and DO NOT ADD EGG.
Prepare KP brown rice pasta as directions on the package
Mix pasta and meat

Alternative- I like serving the ground beef on top of rice.
If I'm serving for YT. I serve it on a platter.
I put the rice down , push it to the sides making a well and then put the ground beef in the middle.

Potato balls
This is complicated and I've never made them, I let my mom make them for me
Same ground beef recipe
Make really thick doughy mash potato,
Using oiled hand
Then you flatten a little bit of potato in your hand
Add a tsp of meat and close the ball up.
In 2 Seperate bowls egg and in the other potato starch -season the potato starch
Pass the balls in egg and then starch and fry.
Too much work for me

What else would you like recipes for?

Wash and dry well.
Deep fry the potatoes
WARNING-people will pass by and take a few as you ar frying and you will not be left with any for this dish.
Take chicken pieces and season very well with salt, pepper, and BAHARAT, all spice a lot of allspice

Place chicken and potatoes in a Pyrex COVER -and bake slowly.

You can place this in a 200 degree oven or a crockpot and serve it on Shabbat the next day.

If you are doing it in the oven - add a little bit of water to the bottom of the Pyrex and double foil it all around so it's well sealed

If you are doing it in the crockpot- take some whole raw potatoes and put it on the bottom- DO NOT ADD WATER- layer the chicken and potatoes on top - then put it on low until the next day.
This will allow the liquid to drain on the bottom and not boil the chicken.
When you serve it slice the potatoes as well and spoon a little of the liquid on top.

You can save the extra liquid - put it in the fridge for the fat to harden- scoop off the fat and throw it out, use the concentrated chicken broth for anything that you want to add extra flavor to- like rice


Rice And Peas -SUPER EASY
Make a pot of rice-
In a sauté pan add 1 TBSP of oil and heat on low med. To the oil add salt and BAHARAT-all spice-
When the oil is nice and hot - add frozen peas (I've seen this KP) and just heat through DO NOT OVER COOK THE PEAS.
When the rice is ready mix together with the oil and everything.

What else do you need a recipe for

You can also make Makshi- stuffed veggies with ground meat and rice.
I make eggplant, zucchini, onion, tomato, but my recipe is not so good.
Maybe someone wants to chime in.
I DONT use kitniyot and don't wet the matza until the last day.

Maybe you can find these in Israel, but in USA it needs to be KP Lesepharadim.
The beans in bulk is NOT Acceptable.
The JSOR - Jersey Shore Rabinical Council is a great resource. You can contact Rabbi or Mrs Farhi (she's an expert in kashrut) and ask them, sometimes things change from year to year.

Also, many don't use chickpeas because Chumus and Chametz are spelled similarly.

Regardless - kitniyot need to be checked 3 times, grain by grain.
I know many women that start right after Chanukah.
Pre checked rice IS VERY EXPENSIVE
$11-$12 for 16 oz.

I cook a little of this and a little of that
You really can't go wrong, just add whatever is in your fridge, no exact recipe.
It's just the idea.

I like these recipes because they are comfort food recipes, the second time you reheat them they tast even better.

Get yourself a pretty journal notebook

Seperate it in 4 sections
Cleaning schedule
Shopping
Grocery shopping
Menus and Recipes

Write everything down
At the end of Pesach write what worked and didn't work. Recipes your family liked and the ones that need to be tweaked or discarded.

When you pack this put it in last, so that next year you can retrieve it easily.

To keep things cheap, make sure to buy the kitniot dry goods and check them yourself before pesach. KLP prechecked rice is a small fortune, but you can purchase any old unenriched rice beforehand which ends up saving money and giving you a better variety. Same things for dried beans; be on the lookout beginning now for sales on brands such as goya... Which are super cheap even without sales.
