Single Mom here, Tonight 2 kids did not eat home. It was just 1 kid and myself. I did NOT feel like cooking. Stuck 2 pieces of minute steak under the broiler and bought a potato salad to go with it and called it a day.

Last night was pizza and french fries for the kids (store bought ready made crust with tomato sauce and cheese). Needed something quick and easy since they had a school thing we had to go back out for.
For myself I made grilled chicken with mushrooms and onions.
Tonight is pasta and cheese. That's what we have every Thursday as I need to cook for Shabbos and do not have time to also cook dinner.

Don't tell my children. While I made them eat their bowl of soup, chicken, rice and veggies, I had a delicious cookies and cream malted and called it a night

Last night was coat drumsticks and homemade baked potato crisps. Was delicious!
I still haven’t decided on tonight. Maybe spinach ravioli?

Whats the coating on the drumsticks? Always looking for good chicken recipes.
Spinach ravioli sounds yum. But im the only one in my ffamily who like spinach and cheese stuff so its usually not worth it.
I think tonight is going to be baked ziti and salad.

Baked ziti.
I reserved some plain noodles for the picky eaters (yeah, I gave up that battle...), and two even pickier eaters had a bowl of cereal and a cheese sandwich. One discovered that she actually likes baked ziti after all, and only one dc noticed that half the noodles were gluten free!

Chicken in a new sauce, rice vermachelli, pickles as the vegetable, and soy ice cream for whoever ate chicken (it worked!)

We had breakfast for supper last night too! ( Not very nutritious but everyone ate and was happy:) waffles( yitzs pancake mix), ice cream, whip cream and syrup and hot cocoa!
My husband and I had a wedding....

I don't have an exact recipe, but this is what I do.
3 cans of tuna
2 eggs
around 1/3 cup mayo
bread crumbs to hold it together
salt, pepper, mustard to taste
bake it covered for 30 minutes, then uncovered for about 10-15
I also saute an onion and grate a carrot and add it in, but if I'm out of time I'll skip it. It adds a lot but it's fine without.

I’ll try to remember.
Batter is:
Honey
Egg
Mustard
Paprika
Salt
Crushed garlic
Coating:
Cornflake crumbs crushed
Parsley flakes
Salt and pepper to taste
I think I remembered all ingredients. Let sit in batter for at least one hour
