Is it unsafe/unhealthy to use onions that have started sprouting?
And if so is it the same with garlic?

From what I understand it's not unsafe, it's just that most of the nutrients have moved into the sprouts.

Sprouting means it's alive; the enzyms are still active. Stopping an onion or garlic from sprouting would mean stopping all enzyme activity.
