I have a bunch of hot peppers in the fridge that are wilting. I used one in my homemade chummus but I have so many more and I don't want to throw them out. My dh usually makes a hot pepper salad but this week we are not having anyone that enjoys spicy food plus the salad is better when the peppers are fresh and firm. So how to use up all these peppers?

Add them to stir fry veg, make orzo or couscous with fried veg, inc. hot pepper, slice them under or over your chicken (depending if you bake or cook in a pot), serve falafel or shwarma for supper...

make zhug -- Yemenite condiment
... if the chilis are the serrano type (smaller than a jalepeno) although you could probubly use jalenpenos also.
Below is a recipe that approximates how I make it -- sorry my cooking isn't an exact science.
use equal amounts of serrano chilis and clean/checked and chopped cilantro.
wear gloves and trim and cube the chilis
For about a cup of chilis, I would add a half to two thirds of a head of garlic that is finely minched or pressed.
a dash of each of the folowing ground spices:
clove
cardamon
black pepper
teaspoon of salt
combine all of the ingredients in the food processor and grind
It is best if you pre chop the cilantro, chilis and press the garlic or else it doesn't grind evenly. And you must wear gloves.
This freezes well so you can put some in the fridge and store the rest in the freezer for later . It can last a few weeks in the fridge.
We also use pre-soaked red hot chilis too. So if you want to go ahead and make a larger batch, go get some dried hot peppers. Soak them over night, drain and add to the mixture before grinding. Add more salt and garlic accordingly but don't add too much more cilantro.

We also have tons of jalapeno and cayenne peppers, so I put them into almost everything:
pizza
chicken
soups
curries
stir fries
etc.
