I see in a lot of ice cream recipes ~half and half~ what is that?

I think it refers to milk? I sometimes see the bottles of milk in Starbucks labeled 'half and half'.
I wonder if I'm wrong?

It's hard to find cholov yisroel; I believe it's half cream and half milk.

I think there used to be a milk that was half the fat, now the blue milk is the lowfat version.

No, CM is correct. For whatever reason Cholev Yisroel brands don't make it. I guess you could get cream and milk and mix them equally but it sounds expensive.

I have gotten half and half before. I think it was just Mehadrin, though.
It's CRAZy fatty tasting.

that's heavy cream. Half and half is not fatty, just fattening.Its a bit thicker then whole milk, and really good in coffee. But not available in cholov Yisrael. You can get heavy cream in CY, but not usually. Its usually about 8.00 a quart.

half and half is half light cream, half milk. If you only have heavy cream, use 1/4 heavy cream and 3/4 whole milk.

How do you use half and half?
I only drink whole milk but I'm wondering if I would like this even better.

You don't drink it.
You use it in coffee, or in recipes (eg, mac & cheese).
As to calories, its about 20 calories per tablespoon, as opposed to about 9 in whole milk. But I use less half and half, so it pretty much balances for me.
