Vegetable soup

4 tomatoes
1/2 bag of carrots
1 onion
head of garlic

grind up in food processor

in soup pot put in a bit of olive oil and sautee some

add water, salt, black pepper, garlic powerder and a soup mix (from a matzoh balls and soup box)

add bag of frozen broccolli, 2 potatoes cut up into tiny pieces, a diced carrot,

bring to boil - then cook about an hour

take matzoh ball mixture and make tiny matzoh ballies and add to boiling soup - cook for around 20 minutes

enjoy!!!

I boil chunks of carrots, potatoes, sweet potatoes, parsnips, turnips, beets, onions garlic & then blend them & freeze in containers - yum!

I saute a diced onion with a couple cloves of crushed garlic. Then I dice, slice or chop whatever appropriate vegetables I have around - celery, root celery, carrots, zucchini, mushrooms, green beans, potatoes, parsley root, parsnip, sweet potato, butternut or other winter squash, peas - just about anything - and add to the sauteeing onions. Add water, bring to boil, season with s & p and a little paprika for color. Cook at least 30-45 minutes, the longer the better up to about 1.5 hours. I thicken it with either barley, pasta or nokerlach.

Sure, just take a beaten egg, add salt and pepper and enough flour to make a thinnish dough and drop by tiny spoonfuls into boiling soup. Wait 5-10 minutes and you'll have yummy nokerlach.

this soup can be made with any veggies you like varying on what you have or are in the mood of ... sweet potatoes, zuchinni, etc. - spices can vary too sometimes I add non-irradiated hot cayenne pepper it's like a little sunshine in a bottle ...

I started using my food processor instead of chopping tons of veggies and I love it! I use the stringy blade (I have a braun fp) and the texture is great it's not like a pureed soup it comes out thick and its quick and easy

I love grated/shredded vegetable soups. What vegetables do you use?

btw ~ I rarely add the soup mix - just a lot of spices & varying veggies I.e. green & yellow zucchini, sweet potatoes and/or red potatoes, broccoli [preferably fresh], etc.

a lot depends on what's in the fridge, cabinet or at the store

today's the perfect day for a soup like this ...

a little bit of this & that go a long way

don't forget to use a lot of salt if you don't want the msg from the packets

and you can make maztoh ballies from scratch - you don't need the mix
