Anyone ever make barley and onions as a side dish? is it good?
Im looking for a cheap, easy side dish for shabbos-having 5 yeshiva boys...

Barley, mushrooms and onions. My husband loves it, so I make it most weeks for Shabbat. From memory ... melt 3 tbs. margarine (I use olive oil instead) in a skillet. Add 1 cup barley to brown. After a few minutes, add 1 chopped onion and continue to saute. Place the barley and onion mixture in a large casserole, add 1 can sliced mushrooms (if you're using fresh, saute them as well), 2-1/2 to 3 cups beef or chicken broth, and salt and pepper to taste. Bake at 350 about 1 hour, or until water is absorbed. Enjoy.

or anyone else got a good recipe for barley as a side dish?

Yes, you can do it on the stovetop, no problem.

does the barley have to be soaked first? how long should it take to cook, and what's the proportion of water to barley?
