This recipe is from Mrs. Ahuva Halpern and it is the best I have made
3 eggs
1 cup sugar
3/4 cup oil
1/3 cup apple juice
5 -5 1/2 cups flour
3 tsp vanilla extract
1/8 tsp almond extract
3 tsp baking powder
Beat eggs and sugar until creamy. Add oil and beat. Add juice and extracts. Add baking powder. Gradually add flour until it becomes a good dough consistency. Fill with favorite filling ( I use brownie batter to fill mine)
Bake at 350 for approx. 10 minutes (until bottom is golden)
These freeze very well.

This makes about 4 1/2 dozen hamentashen. I cut them out with the top of a tupperwear drinking cup, so you have an idea what size that is. (I hope.)

Cookielady, these hamantashen sound really good & I can't wait to try them. But how does it work out with the brownie filling? Isn't it a pretty runny consistency compared to the traditional hamentash fillings?
Also, pretty please...would you mind sharing your chocolate peanut butter hamentash recipe?

I'll add my beware
Almond extract is a concern if people are allergic to nuts. Maybe make sure you label them?
I'm however going to try them and leave out the almond extract

Well we had lots of extra time today bc my husband was home for a bit so we made these hamantashen and it came out great. I just used regular jelly and date filling. Thanks a lot for the recipe!

Considering its such a small amt I'd say it should be ok. I also used orange juice instead oof apple juice since thats what I had. Tastes fine.

ok... so I just opened this thread about an hour ago.... so I ran to the kitchen and made them!
ok... so how do I put it.... ummm... YYYYYYYUUUUUUMMMMMYYYYYYY!!!!
and my kids can vouch for it!!!
I didnt add the almond extract and filled them with jam... tastes just like baught ones!!!

Me too, I jsut now took the second tray out of the oven, I can't keep DH away! I made them the exact same way as you gamekeeper, so good!

the truth is I made then w/o the almond extract because of a nut allergy friend and used oj cause that was what was in the house. They are great.
I do prepare the brownie batter with the eggs, oil and water. Its a thick batter so it works as the center.

I made the hamantaschen and I agree-it's a perfect recipe, if u like crispy hamantash. I did try a few with the the brownie filling, which I did not find too successful...it kind of exploded out of the hamantash. The other ones (assorted jams, poppy) came out great.

I also used this recipe and it worked very well with rolling etc...
The trick I found with the brownie filling is that you can't put too much batter into the hamantashen since it rises. I used cherry pie filling and prune lekvar. They both worked well.
