Mine is pretty phony lo mein, but yummy anyway and quick:
cooked spagetti
diced raw garlic
cooked frozen brocolli
canned mushrooms (you could use fresh, but here they are $$)
dash of soy sauce
dash of garlic powder
You could also put carrots (raw, shredded) or onion
Mix and enjoy.

lo mein stir fry:
in a pot boil spaghetti noodles
meanwhile, sautee veggies in a little oil: cauliflour, broccoli, carrots, red pepper, green pepper, onion, mushrooms. I also added a can of Gefin stir fry vegetables with baby corn, water chestnuts, bamboo shoots, and other things that are only yummy in stir fry
while the veggies are sauteeing you can make the sauce: (I tripled the recipe)
1 tsp red wine vinegar
1 tbsp soy sauce
2 tsp honey
2 tbsp orange juice
1 tbsp vegetable oil
pour the sauce over the veggies, add noodles. yum.
