Almost like a bakery Hamantaschen
A la Marcy Goldman, with my changes, and was even printed under my name in The Baking Sheet!
Make 4 dozen
Recipe doubles well
This is the recipe that DH uses !!!!

2 sticks margarine
1 1/4 cups sugar
2 eggs
1/4 cup orange juice
1 1/2 tsp vanilla
1/4 tsp salt
2 1/2 tsp baking powder
About 4 1/2 cups flour

Egg wash, 12 oz jam for filling, sugar for topping

Cream fat and sugars, add your beaten-and-checked-for-blood-spots eggs and blend until smooth. Add the liquid and the rest of the ingredients.

Let dough sit in 3 divided parts to absorb liquid, then give it 10-15 minutes more in the fridge for easier rolling.

Preheat oven to 350 and line your baking sheet with parchment paper.

Roll out dough to 1/8 inch thick and cut 3 inch rounds. Brush inside with some egg wash (so hamantasch holds together)

Place 1 - 1/2 tsp of filling in each and form triangle.

Brush with egg wash again and sprinkle with sugar if desired; bake 18 – 25 minutes.

Golden Egg Wash
Glazes about 4 dozen

Adds golden glow and glue
1 egg
1 yolk
1 – 2 T milk or water
pinch sugar

Whisk together and paint on with brush

Egg White Glaze
Glazes about 4 dozen

2 whites
1 tsp sugar

Wisk and paint on with brush
