Flaky dough

whats the diffence between flaky dough, puff pastry and phyllo dough? Are they interchangeable?

I think phyllo is crunchier than puff pastry, and it doesn't "flake" as much- can't really describe it. most recipes call for a puff pastry type (like for deli roll). A phyllo dough could be used to make something w/ more of an upward shape, because the dough will stay in that shape and not flop downward like puff pastry.

Puff pastry has lots of layers. When baked it will "puff" up. Phyllo dough won't do that - it's one very thin layer and you have to stack it. I think flaky dough also doesn't puff, but it flakes. Smile

the word that I was looking for yesterday was "stiff." Phyllo dough is STIFFER than puff pastry dough.
