I have the one with the three packets. How many do I use to equal 2 oz fresh yeast?

I use 2 oz. fresh with 5 lbs. flour, or 5 Tbsp (5-6 packets) dry active. If you only have 3 I would halve the recipe - 1 packet is 2 1/2 tsp. yeast which is good for about 3 c. flour.

For the Heller recipe, I measured the packets by tablespoons and needed about 4 packets. Either a little less or a little more.

take 2 ... in place of 1 1/4 oz fresh yeast in a recipe I have I use 2 packets of dry yeast ... always works for me ...
and yeast if properly working can actually rise way more than we think ... so imo the 3 packets will be good enough to go for the 2 oz ...

I'm pretty sure I once heard Devorah Heller say that 1 oz. fresh= a Tbsp and a tsp dry. That's what I do.

Rule of thumb is 1 oz fresh = 2 1/2 tsp dry yeast so figure 5 tsp dry yeast is 2 oz fresh.

I use four packets for 5lbs of flour, but have gotten away with using three when I was running low.

According to Spice & Spirit, AKA the purple book
2oz = 3packets dry yeast which is about 1 1/2 TBS

according to the packet of RedStar yeast:
three 1/4 oz packets equal the activity of one 2 oz yeast cake
2 1/4 tsp equal one 1/4 oz packet

I used a recipe for years that asked for 2 oz fresh and 2 packets dry
and used 5 packets of dry yeast (which would be 3 packets of dryinstead of 2 oz of fresh, cuz I couldn't find fresh yeast) and the challah always came out GREAT
I changed my recipe now, cuz I use whole wheat only....

When a recipe says yeast is it referring to fresh yeast or dry yeast?
(I hope that isnt a stupid question)

if its measured in ounces, its talking about fresh .If its in Tsp. or Tbsp, it's dry. I cannot imagine that a recipe would not give a measurement.
