I have a great recipe for a romaine salad with sliced chicken breast and craisins, which is a nice appetizer. Let me know if you'd like that recipe.
Another great appetizer is fresh fruit salad, especially in the summer time when fruit is at it's best. I cut up melon, peaches, mango, kiwi, and anything else I happen to be in the mood of, and it's really refreshing.

I sometimes do an israeli themed appetizer. I serve chumus, tehini, babaganoush, eggplant salad and whatever other dips you like. Then I serve platters of kibbeh and cigars and sometimes stuffed grape leaves.

Egg salad with sauteed onions - and sometimes cut up tomatoes and peppers either to add to the egg salad or decorate the plate

Do you guys do this in place of fish? Dh always wants fish (which I am so bored of) b/c it's shabbos.

I make various kinds of soup in the crockpot. Dh LOVES soup, and wants it both Friday night and shabbos lunch. I don't make it every shabbos in the summer, however, because sometimes it's just too hot. He doesn't particularly like fruit soup, so that's not a good alternative.
What else?
-dips with vegetables (especially jicama - YUM!)
-multi-colored pasta salad can be very pretty
-stuffed mushrooms or other vegetables
-salmon teriyaki or tri-colored gefilte fish
-wantons with dipping sauce
I'm getting hungry.

This looks great and is delicious:
On a salad plate, put a bed of angel hair pasta. On top of that put some salad greens. On top of that flake some cooked salmon ( I cook it in a teriyaki sauce.) Sprinkle some flavored croutons. Then drizzle some honey/ mustard dressing.
This is easy and really good.

you are really confusing me here ... eyes are important
I've seen people serve avocado/rice sushi - then you can make a garden salad with chunks of avocado to go with it ...
I personally am not big on appetizers ... I head straight for the main dish ...

You can make tuna in puff pastry if dh really wants fish, same as a meat roll but with tuna.
I make the baked tuna from the S&S book for Shabbot Lunch quite a lot, or for 3rd meal. I just eliminate the tomato sauce you are supposed to serve on top. It's in the regular section, not in teh Shabbos section (loaned out my book so I can't say exactly which page, but it's a baked tuna recipe, breadcrumbs, eggs, mayo I think)

Cookielady, that sounds like a whole meal to me!
Other appetizer ideas:
Fresh fruit, sliced and arranged in a pattern (flower, tree, etc) on a black plate
Cold soup (vichyssoise, gazpacho, fruit soup, melon soup, etc)
Sushi
Varied Salads: beet, carrot, indonesian rice salad (with peanuts, e tc), devilled eggs, purple cabbage, etc
Homemade eggrolls
Salmon or tuna croquettes

I've been making huge salads (lettuce, cukes, tomatoes, scallions, fresh mushrooms, cauliflower, purple cabbage, canned corn (drained), canned chickpeas (washed and drained), topping it with sliced grilled chicken breast and a dijon vinagrette.
