in my experience it works well if you don't freeze it for so long but after a few weeks the yeast dies and it won't rise when it's defrosted. That may not be scientific, it was just what has appeared to happen to me numerous times.

I was told by a rav that u can only do hafrashas challah if you bake everything at once . Otherwise you should take challah without a bracha
