I actually just made one tonight to eat by Shalosh Seudos on shabbos, because its something filling for before the fast and can be eaten cold, I am also making cheese blintzes.
The recipe for the cheese kugel is:
12 oz. bag of noodles
3 eggs
1 container cottage cheese
1 yogurt
1 tsp. vanilla
1 c. sugar
3 Tbs. oil (I leave this out)
boil the noodles, rinse them, mix in the rest of the ingredients, pour into a 9x13 and cook it covered for one hour
