Anyone have a good recipe for butternut squash in a piecrust ? I had a piece this summer and it was delicious, but I did not get the recipe from the person who made it.

can be made w/ butternut squash, sweet potato, or pumpkin:
1 squash (or other choice), cooked till soft, drained and mashed. (2-3 cups)
2 eggs
1/2 cup firmly packed brown sugar
2 tblsp flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/2 cup coffee rich or soy milk
1 deep dish, or 2 regular pie crust
add ingredients in order. pour into shell(s). bake 450 for 10 minutes, then 375 for 45 min.
if dont like nutmeg or ginger, leave them out.
can also be done in 9x13 pan and used as squash kugel.

Thanks, Shanie I actually just found a very similar recipe, but it had sweet potsto as the main ingredient originally, I will try it and let you know how it came out.

Shanie it came out delicious! I actually told my hubby it's sweet potato so he would try it, and he said YUM! Then I told him it was butternut squash, and he thought I was making it up, no way would he ever like butternut squash!

Thanks for this recipe. It was really good. I used a bit less sugar and everyone ate it up!!
