Is there a way to bake this with more natural/healthy ingredients- oil instead of margarine and something else instead of whip, maybe soy milk?

I made the mishpacha brownie bars - came out yummy - but I had lots of extra brownie part. I baked it separately but now what do I do with it - anything other than a dallop of whipped cream?

Has any one made this in a gluten free version yet?
My dd used to love the reisman's brownie bars but can't have it now just wondering if the dough can be converted to gf.
