This is a modified version of the pumpkin pie recipe on the Libby's pumpkin can. Posted as per rachie's request...
1/2 cup sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger (I don't care for ginger, so I skip this)
1/4 tsp. ground cloves or allspice
2 eggs or 3-4 whites
1 1/2 cups soy milk
15 oz. can pure pumpkin
Preheat oven to 425.
Combine sugar, salt, cinnamon, ginger, & cloves in a small bowl.
Beat eggs lightly in a large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in soy milk.
Pour into round pan. (I like to use a round pyrex pie dish)
Bake in preheated oven for 15 minutes, then lower oven temp to 350 and bake for another 40-50 minutes. Cool on wire rack for 2 hours.
