I made up a salad- spinach, roasted sweet potatoes and feta with a really yummy dressing that I found in a moosewood cookbook...
I have apple cider vinegar, I read that if you put a pinch of sugar it can mimic the taste of rice vinegar but I am not sure...

It's a dressing? That would be fine.

I used to use only rice vinegar because it's very mild and we don't really like the taste of vinegar too much. I can't get it anymore, so I use regular white vingar only. Someone here said to put herbs in the bottle. I did that, but I can't tell if there's such a difference or not.

Apple vinegar with a little sugar should be fine. You can alsouse wine vinegar.

White vinegar is about 5% acidity, and rice wine vinegar is something less - about 4% or 4.2%.
Add 1 teaspoon of water to 2 tablespoons of white vinegar. That'd give you about 4.25% vinegar.
