I am looking for a different (nicer then regular rice and vegtables or roasted potatoes), super simple and cheap side dish for shabbos

how about trying a different grain, like barley, quinoa, or oat groats, or wild rice? Maybe an interesting green veggie, like kale or rainbow chard?

I have a great recipe for brown rice with a ginger/veggie sautee mixed in. let me know if u want it.

Rice and Mushrooms
• 2 C. rice
• 1 can undrained mushrooms
• ½ C. oil
• 3 Tbsp soy sauce
• 2 heaping tbsp onion soup mix
• 3 C. water.
1. Mix in 9x13 pan and bake @ 350 for about 45 minutes or until water is drained.(and rice is soft)
2. Enjoy.

theres a recipe for french fried orzo (or some similar name) in the kosher pallette. Very easy. (I used fried onions instead, have no idea what french fried onions are)

kasha varnishkas is nice and very easy too. it tastes pretty good cold also.

you can use israeli cous cous instead of orzo; I find them very similar.

my sister makes a super easy rice in a pot. First she sautes thin lokshin, then adds rice (regular and or wild) and twice the amount of water and whatever flavourings you like (soup mix, soy sauce, salt pepper).

raisin, israelis don't call that couscous. that's ptitim (and they come in many shapes).

A noodle pesto salad:

Olive oil, lots of fresh garlic, a bag of Basil leaves, pine nuts (you can also use almonds) and parmesan cheese (optional for dairy meals).

Mix in the food processor and and mix with cooked noodles.

Really yum on thin spaghetti like noodles!

you can make onion lokshen kugel in mini bundt pans (really easy and looks so pretty and is yum)
sautee 4 large onions in oil
add bag of thin egg noodles (cooked)
add 4 eggs
salt and pepper to taste
spoon into mini bundt pans (or if you want muffin pans)
bake uncovered at 350 for 45 min

easy veggie that's different;

- rutabega mash
- sweet potatoes, fingerlings and fennel roasted with garlic and purple onion(very yum)
- quinoa kugel (kind of like rice pudding/kugel but with quinoa - or black rice)
- mushroom salad (fresh mushrooms, sliced, balsamic vinegar, salt, thinly sliced onions, parsley, sugar, optional: chopped tomato)

everything else I make is pretty standard fare
