Its very easy. I'm sorry I don't have exact measurements but its hard to do this wrong.
1 bag couscous cooked
diced red onion
diced colored peppers
craisins
equal amounts (about 1/2 cup each)
oil
vinegar
sugar
add salt and pepper to taste.

Quinoa kugel:
used cooked quinoa
add eggs (about 1 egg/3/4 c. cooked quinoa),
sugar, vanilla, salt, cinnamon and "milk" and heat until it just begins to bubble around the edges. Add cooked quinoa and pour into a greased pan. cover and bake at 350 until it sets (about 30-45 min for an 8x8" pan and 60 for a 9x13"). Let sit at least 15 minutes before serving. you can also add cardamom, raisins, currents or chopped dried fruit for a little something different.
Oh ya, if you have a round pan or a bunt pan you can put the fruit at the bottom then add the kugel batter and then invert it to serve - really pretty!

cook 1 lb box spaghetti.
Mix:
1/2 cup dark soy sauce
1/2 cup toasted or roasted sesame oil
1/3 cup sugar
3 scallions thinly sliced (I don't always include this)
1/4 cup or more sesame seeds.
Mix.

rutabega mash -
buy a rutabega, peel and cut into chunks (be careful as they are very dense)
boil in water for at least 1 hour (not a rapid boil. more of a simmer/boil)
once tender mash with a fork and add a little fat (margarine or oil), salt and pepper-
That's it! 1 g/zunt retabega will last us all 3 Shabbos meals and then some.
A friend of mine also adds some carrots to this which is also really yum.
FYI - they don't get all puree like potatoes - rutabega mainatains a certain chunkiness, which we like. If you want something smoother you should probably use a blender to puree it

This is very good and a little different.
I think this is from the Skokie cook book
2 lb string beans steamed so they are not mushy
1 avacado diced
4 - 6 scallions diced (optional)
2 large handfulls diced dried mango (add right before serving, otherwise it gets soft - its still good - just not the same)
1/4 cup sunflower seeds
1/4 cup chopped pecans
mix:
2 tbsp honey
2 tbsp dijon mustard
1 cup bottled italian dressing (or make your own - I sometimes make the one in the Spice and Spirit)
pour dressing on salad right before serving.
It makes a lot of dressing so you may not need all of it.
There is also another one with fresh mango in the KBD book but it wasn't as good.
