Roasted potatoes with Dijon glaze

Roasted potatoes with Dijon glaze
a la Spark ppl

4 raw potatoes, cut into quarters; any kind, leftover baked potatoes are good
4 cut up green Shallots
cup of wine
1 T Italian seasoning
2 T mustard, any kind
2 T Olive Oil
salt to taste

Directions:

Coat bottom of a large skillet with olive oil and brown your potatoes and shallots, The add your wine, spices, and mustard. Pour over potatoes, and let cook for 5 minutes to cook off the alcohol.

Makes about 8, 1/2 cup servings.

That sounds really good! 2 questions:
1. white or red wine
2. what is Italian seasoning? (I'm thinking some kind of mix of basil & oregano?)

You can use any wine....Italian seasoning - you can google what it is, or use parsley....a shallot is a long green stringy thing.

Apparently they are also referred to as green shallots.

Well that's what I thought. So then what's a green shallot? It seems to be the same as a scallion/green onion.

Now I'm confused. According to wikipedia a scallion is a green onion and a shallot is also called a scallion sometimes. In what part of the country do they refer to scallion as green shallot?

Also interesting, "scallion" comes from place name Ashkelon.
