I baked a fillet of salmon in lemon, garlic, olive oil and a dash of mustard. It came out to sour (too much lemon).
How do I revamp the leftovers (I have about half a large fillet)?
I'm thinking of a salad or maybe dipping it in a sauce of some sort.
Any ideas out there?

we make a dish where we take linguini, frozen steamed peas, and cubed boiled potatoes and mix it all up with some pasta water (for extra creaminess) olive oil, parmesean and flaked baked salmon.
it's really yummy and a one dish suppper.

What I ended up doing for dinner is this:
I made a pot of pasta
sliced about five cloves of garlic, sauteed the garlic in olive oil, flaked up the salmon with a fork and transfered to the pot, I added frozen basil cubes, some tobasco, salt and pepper and the pasta.
It came out great, my kids loved this dish. I'm thinking of maybe buying canned salmon and doing this on purposs do you think this would work?

When I make salmon for Shabbat, if there's any left over on Sunday, hubby and my daughters (if they're home) will make sushi. I don't like sushi, so they get to enjoy.
