I dont have an apple kugel recipe but a very easy sweet side dish is pumkin soufle. I just make the pumkin pie recipe on the can of libbys pure pumkin and substitute vanilla soy milk for the condensed or evaperated (I dont remember which it is) milk. Its a very easy recipe- just basically eggs, sugar, soy milk....all mixed up with the pumkin. I sometimes make it in a prepared pie shell but it is just as good in a round baking dish.

1 c flour
1 c sugar
1 c oil
4 eggs
2 tsp baking powder
Slice 2 apples. Layer apples then half of above mixture and another layer of apples and the rest of the mixture. Sprinkle top with cinnamon and bake til golden/ knife comes out clean.
When I'm really short on time, I just dice the apples, mix everything up, sprinkle cin on top and bake.

apple kugel--fast and easy
4 eggs
2 cups sugar
1 cup oil
1/4 cup orange juice
2 1/2 tsp vanilla sugar
3 cups flour
3 tsp baking powder
apple mixture:
4 med cortland apples, grated
1 tsp cinnamon
5 tbs sugar
preheat oven 350
mix first mixture
mix second mixture
combine both
put in 9x13 bekele
bake for 1+ hr, until pricked toothpick comes out dry
freezes very well too!
best part, I don't shlep out my mixer for this, I mix it in a bowl w/ a hand mixer, fast, easy, clean, and very delicious, too!

I usually make apple crumble muffins, fri night I like something sweet on my plate.
the crumbs
melted margarine
1 part sugar to 1.5 parts flour, depending on how much margarine you use
I use cortland or macintosh cut into thin small squares
lemon juice
cinamon
I line the bottom of the muffin cups with some crumble patted down, add apples, then crumble on top.
bake 350

thanks! sounds delicious! I tried making a pumpkin cake/kugel but it didnt really go so well, everyone liked my classic carrot better... (made with baby food so super easy!) I sometimes make apple cobbler for dessert so I figured a more cakey version can be kugel... (the next thing you know people will be serving chocolate kugel )

We love this recipe! It's in the first KBD.
I also have a really good and very easy recipe that I'll have to post later. I made it a couple weeks ago and it was gone by the end of shabbos.

3 large eggs
1/2 cup oil
1 cup sugar (I use less)
1 tsp cinamon, plus extra
1 tsp almond extract (I use vanilla)
1 cup flour
1/2 tsp baking powder
2-3 medium Mcintosh or Rome apples (I use granny smith)- peeled and cut into small peices
1/4 cup chopped nuts, optional
Preheat oven 350. Grease 12 muffin tins.
In large bowl, mix eggs, oil, sugar, cinamon, almond extract, flour and baking powder until smooth. Do not overmix.
PLace a small mound of apples into each muffin tin. Spoon batter into each tin to cover apples. Sprinkle with cinamon and nuts.
Bake 20-30 minutes.
I end up geting close to 18 muffins. Recently I switched to using a small loaf pan, easier for me. Enjoy!

I only had two apples, so I halved the recipe. But I didn't have enough oil, so I used apple sauce instead. Also, since it was a small recipe, and I didn't have anything smaller than a 9 x 13, I made them into mini muffins. Yummmmm

2 questions:
-What is the temp for the oven and for how long?
-What size of pan to use?

Two apples are enough? Can I use three instead?
