Two Tone Pesach Kugel

Two Tone Pesach Kugel

First layer:
2 large carrots
1 large potato
1 onion
1 stalk celery
1/2 cup oil
1 tbsp paprika
1 tbsp salt
dash of pepper
3/4 cup potato starch

Grate veggies in food processor on S blade. Combine all ingredients and pour into two 8" rounds. Bake at 350' for 1/2 hour.

2nd Layer
2 lbs zuccini
2 tsp mayonnaise
3 eggs
Salt and pepper to taste

Cook zucchini until soft, drain and mash. Add rest of ingredients. Pour over first kugel layer and bake at 375' for 45 minutes.

Thanks for the recipe! It's in the oven now. I think I didn't use enough zucchini though (who knows how many are in a pound?) cuz the top part was mostly frothy and not to vegetably. Smile

why do you have to make the first one in two pans? can you just make the first part in a 9*13 and pour the 2nd over it?

This recipe makes 2 9" rounds or 1 9x13.

sounds very good. can it be frozen in advance? I once made a chametz layer kugel and when I defrosted it it got all mushy and did not look too good.

If any of the vegetables are cooked before you bake it into the kugel, the kugel will weep when defrosted and will be a soggy mess.
If you want to make it in advance, I suggest you grate the raw zucchini like the vegetables in the first layer, and not cook it first.

do u mean that I should prepare the two sepeate layers and freeze them raw and then cook it right before pesach?

The first layer is like a kishke... No eggs.

I would not freeze the top part of this kugel. If you want to prepare in advance, you can make the bottom part and freeze and then add the top part later.
